Under favorable conditions, La Crescent is hardy to -36°F. This University of Minnesota release exhibits moderate to high vigor and a trailing growth habit. Bud break occurs early, with fruit ripening in the early to mid-season. The variety is quite susceptible to downy mildew and black rot, though both can be effectively managed with a well-planned spray program. Preventing early defoliation caused by downy or powdery mildew is critical to ensure proper vine hardening before winter.

La Crescent appears to perform best on drier soils. The variety is prone to berry shelling as harvest approaches, making late harvesting impractical. When fully ripened, fruit typically reaches 22–27° Brix with acidity levels of 12–14 g/L. Wine quality can be outstanding, with La Crescent earning multiple “Best of Show” awards for cold-climate white wines at ICCW competitions.

Wines are highly aromatic, showing pronounced notes of apricot, lime, and honey, and are often compared to high-quality Vignoles or Riesling. In exceptional vintages, La Crescent can be crafted as a dry wine if acidity moderates and careful winery practices are used, though it is more commonly finished in an off-dry to sweet style. The variety also excels in the production of rich dessert wines.

One of the most widely planted northern cultivars, La Crescent includes Muscat Hamburg in its parentage. Its naturally high acidity makes it particularly well suited for off-dry to sweet wines, typically expressing apricot, peach, and citrus flavors, as well as dessert and late-harvest styles.
