This apple ripens around the time of the Minnesota State Fair, hence the name, and is the parent of another earl variety also of UofM: Zestar. Developed in the 1970s by the UofM Apple Breeding Program~ which has produced scores of cold hardy apple varieties~ as another cold hardy option for northern orchards. Released to the public in 1979. 

Created by crossing the Mantet with the Oriole apples, the University was able to create a firm early apple that bakes well. It should be used within a couple of weeks for best flavor and texture. The apple is large, round, and very sweet with just a hint of tartness. Its skin is bright red and very shiny. Easy to eat it tastes delicious off the tree and works well with, usually tarter, other early apples.
