European, probably French given the name, baking apple. First mentioned by the Dutch pomologist (apple expert) Johann Knoop in 1776 though was almost certainly grown before then. Has numerous names given it long growing history.
The apple is medium sized, more round than tall, and blushed to a candy red -orange color. Its skin is russeted near its stem that grows down the apple nearly covering about ⅓ of the apple. The calyx is unremarkable. The apple has then traditional star shaped seed structure and is creamy white in color. Medium fine-grained, tender, and crispy. While juicy the apple is dry and sweet with the scent of oranges and honey. Flavor matures with storage.
When planted, the tree is moderately vigorous, upright and spreading. Tree tends toward biennialism and should be pruned to encourage annual cropping. Spur bearer. Well suited for espalier pruning. Tree is also mildly resistant to most common diseases.
